The Pharisees were upset with Jesus healing and not fasting on Sabbath. Jesus defied them when he claimed ,as the Son of Man , he is also The lord of Sabbath. Pharisee are followers to the letter of the old scriptures and who project their power by blindly following without any regard.

Why were the religious leaders so upset that Jesus would heal on the Sabbath (religious day off)?

Its always been a religious law to observe Sabbath Day as indeed a holy day, with lots of restrictions, of things that you can do and not do. One of these is not to work on a Sabbath. Because these religious leaders were so narrow-minded and so attached and literal to their laws, they took it against Jesus when He healed on supposed to be holy or sacred day. Actually, bottomline is that they were really so insecure of Jesus and were really eager to find wrong in Him so he could pin Him down.
